Description

This Barolo comes from vineyards in Grinzane Cavour that Giovanni Canonica inherited through his family. The holding includes old Nebbiolo vines with a significant presence of the rare Rosé component, rooted in calcareous marl and clay. After destemming, fermentation relies on indigenous yeasts and extended contact with the skins. Vertical pressing is followed by maturation in concrete and Slavonian oak, maintaining a traditional approach throughout the cellar work. Bottled without fining or filtration, it reflects the estate’s small-scale production and offers a distinct expression of Grinzane Cavour within Canonica’s range.
