Description

Paiagallo comes from the hillside above Barolo village, where Giovanni Canonica farms a small holding on calcareous marl and clay. Nebbiolo is handled in a traditional manner, with indigenous yeasts, extended skin contact and maturation in large wooden vessels. Vineyard work avoids herbicides and chemical fertilisers, with treatments restricted to copper and sulphur. The wine places its origin and the grape’s structure at the centre of the experience, combining dark fruit, assertive tannins and considerable energy. Production remains closely connected to the small, family-run cellar beneath the estate’s agriturismo in Barolo.
