Girlan’s Pasithea Oro presents Gewürztraminer as a sweet, late-harvest wine. The grapes come from a vineyard in the Oltradige near Lake Monticolo, where local conditions favour the development of noble rot. Hand picking into small containers protects the bunches from excessive pressure. Brief maceration is followed by gentle whole-bunch pressing and clarification of the must through natural settling. Fermentation and maturation take place in small oak barrels, forming a cellar process that accompanies the natural concentration of the grapes from this particular growing site.
