Description
Le Mont-Aigu 2013 is Guiborat's single-vineyard Blanc de Blancs from Chouilly, made from Chardonnay planted in 1970 above a thick layer of white chalk. It is a separate selection from the blend De Caurés à Mont Aigu. The base wine spent six months on its lees, mainly in stainless steel with a small portion in used 400-litre barrels. Malolactic fermentation was prevented. Following the second fermentation, extended lees ageing and further cellar rest preceded release without dosage. Precise vineyard origin and patient maturation are the central elements of this particular cuvée.
