Description

Prisme is the Blanc de Blancs through which Richard and Karine Fouquet bring together the Grand Cru terroirs of Cramant, Chouilly and Oiry. Chardonnay from different parcels is selected to form a whole that expresses the depth of the Côte des Blancs' chalk soils. Winemaking favours stainless steel and avoids malolactic fermentation, keeping tension central to the wine. Rest on the lees in underground cellars accompanies the cuvée's development. Its name reflects that idea: observing the wine through the prism of its different origins, brought together in a single blend rather than presented as separate vineyard bottlings.
