Guilhem and Jean-Hugues Goisot's Bourgogne Côtes d'Auxerre Blanc is a Chardonnay from the Haut de la Ronce, Vignes de Forterre and Les Allets climats. The vines root in Portlandian limestone debris and hard, white, angular Barrois limestone. The vineyard is cultivated using organic and biodynamic practices. Manual sorting and destemming precede slow pressing and must settling. Indigenous-yeast fermentation and spontaneous malolactic fermentation lead into maturation on fine lees in stainless steel without bâtonnage, keeping the relationship between Chardonnay and its Auxerrois origin central to the wine.
