Description

Guillaume Gilles’s Cornas comes primarily from the upper terraces of Chaillot, where granite alternates with clay and limestone soils and exposures vary between parcels. Syrah is grown with an organic approach and manual vineyard work, following the legacy of the grower’s mentor Robert Michel. In the cellar, bunches remain whole and fermentation begins with the grapes’ natural yeasts. Extended maceration is followed by maturation in old demi-muids, and the wine is bottled without fining or filtration. This traditional interpretation foregrounds the deep, spicy character of Cornas and the diversity found within Chaillot.
