Description
Largillier grew from the collaboration between Guillaume Selosse and Jérôme Coessens, a grower in Ville-sur-Arce in the Aube. Its Pinot Noir comes from L'Argillier, a parcel characterized by heavy clay derived from Kimmeridgian limestone. Guillaume gives this fruit extended development as a base wine: barrel fermentation, rest on the lees and subsequent blending with a perpetual reserve before the second fermentation. Indigenous yeasts and the time spent before bottling are essential to the cuvée. This Champagne connects a precise Aube origin with Selosse's personal interpretation of vinification and maturation, allowing the still wine considerable development before the bubbles are formed.
