Henri Chauvet’s Froussard 2022 is a Chardonnay from Boudes in Auvergne, made from old vines of Burgundian massal selection rooted in iron-rich red clay and weathered granite. Organic farming accompanies precise winemaking: direct pressing of whole bunches without juice settling, followed by spontaneous fermentation in wood. For this vintage, equal proportions matured in new five-hundred-litre casks and used barrels, without lees stirring. Bottling in October 2023 took place without fining or filtration. This white connects a familiar variety with a distinctive geological origin and the grower’s highly personal choices in the cellar.
