Description

Fût de Chêne brings together three central elements of Henri Giraud's style: Aÿ Grand Cru, the importance of Pinot Noir and vinification in small oak barrels. Originally created as a vintage cuvée, it later developed a multi-vintage identity while remaining linked to the house's research into the relationship between grapes and wood. Barrel selection and study of the wood's origins accompany work on the Aÿ parcels. The name makes this approach explicit: fermentation and maturation are integral to the wine's construction, together with grape selection and the art of blending its components.
