Description

Hudelot-Noëllat's Romanée-Saint-Vivant Grand Cru is a Pinot Noir from an east-facing parcel. The ground comprises brown calcareous soils with a substantial clay component over hard Prémeaux limestone of Jurassic origin. Harvesting and grape sorting are manual. Following partial destemming, fermentation takes place with indigenous yeasts and cap punching, followed by maturation in oak barrels. The wine is bottled without fining or filtration. The cuvée therefore connects the Grand Cru's identity with its vineyard geology and the family's work on the climats of the Côte de Nuits.
