Description

Cripto is I Borboni’s vintage traditional-method sparkling wine, made from Asprinio grown in the Agro Aversano and released without dosage. Its name evokes the secondary fermentation sheltered in tuff caves beneath the Numeroso family home, protected from light and temperature changes. The vineyards grow on predominantly sandy soils of volcanic origin, using traditional alberata training alongside other systems. Stainless steel vinification precedes bottle fermentation and ageing on the lees. Citrus, yeast and mineral touches accompany a slender, fresh and persistent palate, animated by a fine stream of bubbles throughout the tasting.
