Description

Palmento Caselle is an Etna Bianco Superiore from Salvo Foti’s I Vigneri, made entirely from Carricante at Milo on the volcano’s eastern side. The small parcel lies at around seven hundred and fifty metres on sandy volcanic soil containing lapilli and pumice. Planted in 2010 from a massal selection, the ungrafted vines are trained as traditional Etna bush vines with chestnut stakes. Whole grapes are pressed directly; the must settles naturally and ferments with indigenous yeasts in wood. Maturation continues in five-hundred-litre casks and subsequently in bottle.
