Description

Exordium is Il Carpino’s interpretation of Friulano, a white wine made entirely from Tocai Friulano and vinified with skin contact. Fermentation takes place with indigenous yeasts in open vats, followed by maturation in large oak casks. The colour tends towards golden yellow, while the aromatic profile combines sage and green pepper with resinous hints and candied citrus. On the palate it shows intensity and body, ending on a savoury note. This structure suits substantial fish dishes, including smoked salmon, while retaining the character of the grape variety and the skin-contact approach.
