Description

Il Contestatore is Il Pendio’s Chardonnay Metodo Classico from the northeast-facing Gradoni and the upper part of the Ruc behind the walnut tree. The selection retains a precise connection with these vineyard sections. The base wine rests in stainless steel before tirage, followed by extended maturation on the lees. The estate disgorges by hand and tops up only with the same wine, without liqueur or added sugar. A straw-yellow colour and fine bubbles accompany a restrained interpretation of Chardonnay, shaped by its origin and by a deliberately slow approach to maturation in the cellar.
