Description
Jacques Lassaigne’s Millésime Blanc de Blancs comes from Chardonnay grown on the chalky hill of Montgueux in the Aube. The cuvée brings together grapes from different parcels within a single harvest, selected to convey that year’s expression. Fermentation takes place in stainless steel and uses indigenous yeasts. Winemaking is followed by extended bottle maturation on the lees before disgorgement by hand. This approach focuses on one grape variety and one harvest, sitting alongside the cuvées that Emmanuel Lassaigne creates by blending wines from different years.
