Description
Jacques Lassaigne’s La Colline Inspirée is a Blanc de Blancs Champagne made from Chardonnay grown in Montgueux, a chalky hill in the Aube. The cuvée brings together wines from different harvests, vinified separately before blending. Fermentation and maturation take place entirely in used barrels, whose role is to accompany development without imparting a pronounced new-oak flavour. Indigenous yeasts and manual disgorgement are part of Emmanuel Lassaigne’s approach. Work with time, reserve wines and maturation vessels forms the distinctive character of this interpretation of Chardonnay from the hill.
