Description
Jacques Lassaigne’s Les Vignes de Montgueux is a Chardonnay Blanc de Blancs Champagne built from a blend of different parcels and harvests in the village. Montgueux is an isolated hill in the Aube, characterised by limestone and chalk soils. Grapes are harvested by hand at ripeness and fermentation employs indigenous yeasts. The cuvée brings together different origins on the same hill, expressing Chardonnay’s central role in Emmanuel Lassaigne’s production. Bottle maturation on the lees precedes manual disgorgement, an integral part of the estate’s hands-on cellar work.
