Description
Jean Chartron's Les Pierres Sèches is a white Santenay made from Chardonnay grown on clay-limestone soils. Fermentation takes place in oak barrels, using both new wood and vessels previously used for other vintages. Maturation continues on the fine lees for approximately twelve months in barrel, followed by around four months in tank. This sequence separates fermentation, ageing and the resting period before bottling. The cuvée brings the Chartron family's white-wine production to Santenay, alongside the historical centre of the estate in Puligny-Montrachet, founded in 1859.
