In his Soliste series, Jean-Marc Sélèque, a grower in Pierry near Épernay, bottles a single plot and a single grape variety on their own. Les Gayères, 2018 vintage, comes from the lieu-dit of that name on quartz-rich soils and is dosed Extra Brut. The Champagne is fine and flowing, with fruit, flowers and hints of pastry.
