Jean-Michel Gaunoux & Fils Volnay Premier Cru Clos des Chênes is a red wine from the Côte de Beaune classified as Premier Cru. Grapes are selected on sorting tables in the vineyard and then fully destemmed. Cold maceration precedes the spontaneous start of fermentation in tank, accompanied by punching down and checks on temperature and density. Once fermentation is complete, free-run and press wine are combined and transferred into barrels. Oak maturation includes a proportion of new wood, with the first racking taking place after malolactic fermentation.
