The 2021 L’Ultime from Jean‑Michel Stephan is a Côte‑Rôtie made from Syrah and Viognier grown on granite and schist soils. Vinification includes semi-carbonic maceration and roughly 24 months of oak ageing, yielding fine tannins, lively acidity and aromas of red fruit, violet and spice. It shows structure with an airy elegance and is suitable for moderate bottle ageing.
