Description

Jérémy Carteret's Aligoté Doré comes from Les Grandes Carelles in Pommard, where the vines were planted in 1937. Work on this leased parcel follows uncertified organic practices, with cover crops and limited soil cultivation. Picking is divided according to the grapes' ripeness, followed by foot crushing and vertical pressing. Spontaneous fermentation and maturation on the lees take place in barrels before the wine is bottled by hand. The cuvée gives an established Aligoté planting a dedicated expression through vineyard and cellar decisions closely connected to the condition of the fruit.
