Description

Euphoria Rouge 2023 comes entirely from Pinot Noir grown in Les Crucibées, in the Hautes-Côtes de Beaune. That origin is particularly important for this Jérémy Carteret cuvée, whose composition changes in subsequent vintages. The grapes are fermented as whole clusters, using an indigenous-yeast starter; vertical pressing takes place before fermentation has consumed all the sugars. In 2023, maturation lasted nine months and combined oak barrels with a 600-litre clay jar. Hand bottling completes a small-scale approach, with sulphur dioxide additions kept to the amounts considered necessary during the process.
