Description

La Closerie & extends Jérôme Prévost's work through fruit selected from other growers, collaborating closely on harvest decisions. The cuvée offers a complementary interpretation to the historic Les Béguines vineyard while maintaining the same exacting cellar approach. Fermentation takes place with indigenous yeasts in previously used barrels of different sizes, followed by maturation without racking, filtration or stabilization. Its identity is therefore tied to a project of collaboration and blending. Fruit quality, ripeness and an understanding of Champagne first and foremost as wine remain central, even as the sources of the grapes extend beyond the estate's original parcel.
