Description

Produced by Joannès Violot-Guillemard, the Bourgogne “Les Maisons-Dieu” is a red wine made from Pinot Noir grown on a parcel at the edge of Pommard in the Côte d'Or. It ferments in wooden vats with a relatively short maceration, then spends about 14–18 months ageing in barrels; it is typically bottled unfined and unfiltered. The wine is balanced with moderate, polished tannins and pairs well with meat dishes and mature cheeses.
