Description

Dash Farm is Joshua Cooper's Chardonnay from the southern granite slopes of Mount Alexander in Victoria, just outside the Macedon Ranges geographical indication. Planted in 1999, the vineyard combines elevation with lean soils, conditions that support the pursuit of concentration and freshness. For the 2021 vintage, grapes are harvested and sorted by hand, partially crushed by foot and gently pressed. Spontaneous fermentation and maturation on the lees take place in oak, followed by a period in stainless steel. The wine is finally bottled without fining or filtration.
