Kmetija Hedele’s Chardonnay Goče comes from vineyards around the village of the same name in Slovenia’s Vipava Valley. Marl and sandstone, locally associated with ponca, accompany organic cultivation without irrigation. Hand-harvested grapes are pressed as whole bunches; fermentation with indigenous yeasts takes place in wood, where malolactic fermentation also occurs. The wine then continues resting on its lees in stainless steel. Extended contact with the lees and the transition between different vessels form part of an approach seeking texture, freshness and a recognisable connection with the vineyard’s place of origin.
