Description

Kmetija Hedele’s Malvazija Goče is made from Malvasia Istriana grown around Goče in the Vipava Valley. The vineyards occupy marl and sandstone soils and are farmed organically, without irrigation. Hand harvesting precedes whole-bunch pressing and fermentation with indigenous yeasts. Previously used wood is selected for this variety, and malolactic fermentation is not encouraged. A subsequent period in stainless steel extends contact with the lees, forming part of a process that combines slow maturation, preservation of freshness and attention to the character of the grape variety and its vineyard surroundings.
