Description

Cabochon Fuoriserie brings together Chardonnay and Pinot Nero from Monte Rossa’s historic crus on the morainic hills of Franciacorta. Hand-picked grapes are carefully selected and gently pressed, with the vineyards vinified separately. First fermentation in small oak casks is one of the defining choices behind the Cabochon project. The blend includes reserve wines before the second fermentation in bottle and extended contact with the lees. A broad structure and fine bubbles are accompanied by freshness, creating a cuvée that seeks stylistic continuity across its individually numbered editions while preserving the identity of the estate.
