Description

Cabochon Stellato 2012 comes from Monte Rossa’s crus on the morainic hills of Bornato. Chardonnay and Pinot Nero are harvested by hand and vinified separately before blending. For this selection, fermentation takes place in small oak casks and bottle ageing lasts nine years. Fine bubbles introduce honey, lime blossom and bergamot, followed by cinnamon, yellow fruit and hints of coffee. The palate retains freshness alongside the complexity acquired over time. This long-matured Franciacorta Brut develops elegance and depth through a patient production process that gives each component room to contribute.
