Description
Olivier Pithon's Laïs Blanc comes from Calce and combines Maccabeu, Grenache Blanc and Grenache Gris. Its name recalls Laïs, the estate's Jersey cow. The vineyards bring together predominantly schist soils with clay, limestone and marl, providing different origins for the blend. Following hand harvesting, the grapes are pressed directly; the wine matures in wooden vats and barrels for ten months. The cuvée seeks freshness, depth and complexity, connecting local white varieties with the geological mosaic of this part of the Côtes Catalanes area.
