Le Pilou from Olivier Pithon is a red IGP Côtes Catalanes produced around Calce in the Roussillon. The cuvée is made exclusively from Carignan from old vines on a limestone plateau; grapes are hand-harvested and the wine is aged in tanks for about 18 months. The selection aims to showcase the varietal character of Carignan.
