Description

Palmento Costanzo’s Prefillossera is an Etna Rosso from the Santo Spirito district at Passopisciaro. It combines Nerello Mascalese and Nerello Cappuccio from vines over a century old, trained as bush vines with chestnut stakes on volcanic sands at around seven hundred and fifty metres. Manual harvesting includes bunch selection in the vineyard. Fermentation with indigenous yeasts and extended maceration take place in rotating French oak casks, followed by maturation in wood and bottle. The profile combines red fruit, suggestions of graphite and balsamic notes with velvety tannins and a savoury finish.
