Description
Pascolo’s Pascal is a Cabernet Sauvignon from the hills of Ruttàrs, in the Dolegna del Collio area. The vineyard faces south on marl-clay soils with sandstone outcrops. Hand harvesting and destemming precede maceration in open vats, with punching down of the cap. Maturation continues in oak tonneaux and subsequently in bottle. The intense ruby colour introduces blackberry, wild berries, blackcurrant and sweet spices. Its substantial structure combines softness, balanced acidity and elegant tannins. A persistent fruity finish makes it suitable for red meats, game and mature cheeses at the table.
