Collio Malvasia

Description

Pascolo’s Malvasia comes from the hills of Ruttàrs, in the Dolegna del Collio area, where vineyards grow on marl-clay soils with sandstone outcrops. The grapes are harvested by hand, destemmed and gently pressed. Fermentation and maturation on the lees take place in stainless steel before a period of rest in bottle. Its straw-yellow colour accompanies aromas of apple, white peach and flint, with touches of nutmeg and white pepper. Round, fresh and savoury on the palate, it finishes with mineral and fruity notes. Fish starters, mushrooms and baked turbot are suitable pairings.
