Description

Pascolo’s Ribolla Gialla comes from Ruttàrs di Dolegna del Collio, from west-facing hillside vineyards on marl-clay soils with layered sandstone. Hand harvesting is followed by destemming and gentle pressing. Fermentation takes place in stainless steel, where the wine matures on its lees before resting in bottle. Straw yellow in colour, it has an aromatic profile shaped by citrus, apple and fresh pineapple, accompanied by a mineral dimension. The palate is slender and fresh, with balanced acidity and a savoury finish. Aperitifs, starters and seafood salads bring out its lively character.
