Description

Pascolo’s Sauvignon brings together grapes from three estate vineyards on the hills of Ruttàrs, characterised by marl-clay soils and layered sandstone. The different sites are vinified separately and blended after fermentation. Hand harvesting, gentle pressing and lees maturation in stainless steel precede a period of rest in bottle. The bouquet includes sage, bell pepper and fig leaf alongside melon, passion fruit and grapefruit. Full and enveloping on the palate, the wine is supported by freshness and savouriness. Its balanced varietal expression suits battered vegetables, pasta with smoked trout and salmon dishes.
