Description

Paul Lebrun’s Blanc de Blancs Extra Brut is made exclusively from Chardonnay, mainly from Cramant, with a contribution from small parcels in the Sézannais. The blend combines the base harvest with reserve wines. A portion of the reserves ferments and rests in used barrels sourced from Chablis, while malolactic fermentation is completed in full. Maturation continues in bottle on the lees before disgorgement and restrained dosage. Its character is taut and saline, in an interpretation of Chardonnay that brings together two distinct areas of Champagne.
