Description
Pierre Paillard’s Ambonnay Vieilles Vignes 2020 comes from Pinot Noir in the Les Aigremonts, La Guillotte and Le Village lieux-dits, planted between 1966 and 1969. These Grand Cru vineyards lie in the Montagne de Reims, where southern and southeastern exposures accompany chalky soils. The wine matures in barrel before the second fermentation under cork. Four years on the lees in bottle follow before disgorgement. A dosage of 2 grams per litre completes this interpretation of Ambonnay’s old vines by Antoine and Quentin Paillard and their family estate.
