Description

Exultet is Quintodecimo's Fiano di Avellino from a single vineyard in Lapio, around 570 metres high, on southwest-facing clay-limestone soils. Hand harvesting and whole-bunch pressing precede fermentation divided between stainless steel and small oak barrels, followed by work with the fine lees. The estate describes linden, acacia and thyme, with a dense structure carrying exotic fruit, citrus and honey. Its name recalls medieval liturgical scrolls and the Exultet of Mirabella Eclano. Freshness and aromatic richness support its ability to develop in bottle, linking a precise vineyard origin with an unhurried approach to the variety.
