R. Dubois & Fils Bourgogne Hautes-Côtes de Beaune Le MontBatois is a Chardonnay from the hills behind the Côte, on clay-limestone soils at around 300–400 metres above sea level. Grape pressing is followed by static settling of the juice. Temperature-controlled fermentation takes place in tanks and barrels, before malolactic fermentation and preparation for bottling. Its golden colour accompanies a profile beginning with citrus and developing honey and oak nuances. The structure is firm, with balance supported by the wine’s rounded texture.
