Description

R. Dubois & Fils Bourgogne Hautes-Côtes de Nuits Blanc comes from Chardonnay grown on hills running parallel to the Côte, at roughly 300 to 400 metres above sea level, on clay-limestone soils. After pressing, the juice is clarified by static settling and begins temperature-controlled fermentation in tanks and barrels. Malolactic fermentation follows. The wine combines a firm structure with the suppleness of the grape variety; initial citrus and apple notes can develop towards honey and toasted nuts as the wine matures.
