Description

Massimo Rivetti’s Alta Langa is made from Chardonnay and Pinot Noir grown on limestone soils, with southwest-facing vineyards at around five hundred metres. Grapes are picked during the coolest hours and protected with dry ice to preserve their characteristics. The first fermentation takes place in temperature-controlled stainless steel, followed by a period on the lees in the same material. The second fermentation occurs in bottle according to the traditional method. The wine then remains on its lees for at least thirty months before disgorgement, completing a process centred on preserving the grapes and allowing time for maturation.
