Description

Jelka is the Collio Bianco that Roberto Picech dedicates to his mother, Jelka Sirk. It combines Ribolla Gialla, Friulano and Malvasia from old vineyards on the Pradis hills near Cormòns, where the soil consists of marl and sandstone. Friulano ferments on its skins in a large cask without selected yeasts or temperature control, while Ribolla and Malvasia are vinified separately in tonneaux. Following maturation in wood, the blend rests for an extended period in concrete and then in bottle. The wine is released without fining or filtration, retaining its connection to this patient production process.
