R. Pouillon’s Les Valnons is a single-parcel Grand Cru Champagne made entirely from Chardonnay grown in Aÿ. The vineyard occupies a west-facing slope at around 160 metres in elevation, on clay-limestone silt soils. Fermentation uses indigenous yeasts and oak barrels of different ages, with lees stirring. The second fermentation takes place under cork and is followed by an extended period on the lees. Extra Brut dosage completes a cuvée that gives Chardonnay an individual interpretation of Aÿ, a village closely associated with the cultivation of Pinot Noir.
