Ronco dei Tassi’s Madame Sauvignon belongs to the Collezione di Famiglia, a range intended to demonstrate the capacity of local white wines to develop over time. The Sauvignon comes from Monte Quarin and the hills around Cormòns, on Eocene marl and sandstone, with east-facing vineyards trained to Guyot. Hand harvesting is followed by crushing, destemming and a brief maceration. The gently pressed juice is allowed to settle before fermentation. Maturation on the fine lees in oak tonneaux completes a process combining vineyard selection with careful work in the cellar.
