Description

Ronco Severo’s Schioppettino comes from Prepotto, where Stefano Novello works on the marl soils known as ponca. The grape is vinified on its own, using healthy, ripe fruit. Cellar work involves extended maceration accompanied by manual punch-downs, followed by draining and pressing of the skins. Maturation continues in Slavonian oak casks with lees contact, before bottling without filtration or fining. The cuvée reflects the estate’s attention to local varieties and to methods intended to retain the substance and character of the grapes, without the use of selected yeasts in fermentation.
