Description

Roy-Prevostat's Chablis Premier Cru Côte de Léchet is a Chardonnay from a steep southeast-facing slope with clay-limestone marl. Hand harvesting is followed by slow pressing, with the musts separated and the best fractions selected. Fermentation uses natural yeasts and is followed by malolactic fermentation; subsequent maturation includes bâtonnage. The profile shows floral nuances, lychee and yellow peach. The palate is full and rounded, with fruit accompanied by a mineral presence. The estate began in the early twentieth century through the union of two Chablis families.
