Description

Salon follows a precise idea: Chardonnay, a single cru, Le Mesnil-sur-Oger, and one selected harvest. Eugène-Aimé Salon's project began with the 1905 vintage and draws on the Jardin Salon together with other small village parcels chosen by the founder. This Blanc de Blancs is made only in years considered capable of expressing that vision. A long stay in the cellars, averaging around ten years before release, allows complexity and finesse to develop. Each vintage consequently retains its own individuality within a tightly defined identity rooted in the vineyards of Le Mesnil-sur-Oger.
